Make these simple, layered bars featuring a chewy oat base, a creamy peanut butter filling, and a rich chocolate topping. No oven is required.

Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup peanut butter
  • 1/2 cup butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup creamy peanut butter (for the middle layer)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, combine the rolled oats, 1/2 cup peanut butter, melted butter, sugar, milk, and vanilla extract. Mix until fully combined.
  3. Press the oat mixture evenly into the bottom of the prepared pan.
  4. In a separate microwave-safe bowl, combine the chocolate chips and the remaining 1/4 cup peanut butter. Microwave in 30-second intervals, stirring between each, until smooth.
  5. Pour the chocolate mixture over the oat base and spread it evenly.
  6. Refrigerate the bars for at least 2 hours, or until the chocolate topping is firm.
  7. Lift the bars out of the pan using the parchment paper overhang and cut into squares.

Notes

  • For a firmer bar, chill the bars for 4 hours or overnight.
  • If you want a slightly healthier version, substitute half the sugar with maple syrup.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
