1 1/2 cups rolled oats
1/2 cup peanut butter
1/2 cup butter, melted
1/2 cup granulated sugar
1/4 cup milk
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
1/4 cup creamy peanut butter (for the middle layer)
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a medium bowl, combine the rolled oats, 1/2 cup peanut butter, melted butter, sugar, milk, and vanilla extract. Mix until fully combined.
Press the oat mixture evenly into the bottom of the prepared pan.
In a separate microwave-safe bowl, combine the chocolate chips and the remaining 1/4 cup peanut butter. Microwave in 30-second intervals, stirring between each, until smooth.
Pour the chocolate mixture over the oat base and spread it evenly.
Refrigerate the bars for at least 2 hours, or until the chocolate topping is firm.
Lift the bars out of the pan using the parchment paper overhang and cut into squares.
Notes
For a firmer bar, chill the bars for 4 hours or overnight.
If you want a slightly healthier version, substitute half the sugar with maple syrup.
Store leftovers in an airtight container in the refrigerator for up to one week.
