  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15 ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  2. Add onion to the skillet and cook until softened, about 5 minutes.
  3. Stir in garlic and ginger and cook for 1 minute more until fragrant.
  4. Add cumin, coriander, turmeric, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  5. Pour in crushed tomatoes and bring to a simmer.
  6. Return chicken to the skillet. Reduce heat to low, cover, and simmer for 15 minutes, or until chicken is cooked through.
  7. Stir in heavy cream, salt, and pepper. Cook for 5 minutes more, until heated through and sauce has thickened slightly.
  8. Garnish with fresh cilantro before serving.

Notes

  • For a milder curry, omit the cayenne pepper.
  • You can substitute chicken breast for chicken thighs, but cook time may need to be adjusted.
  • Serve with basmati rice or naan bread.
