Instructions
Prepare the chicken: Pat the chicken pieces very dry with paper towels. This step helps the breading adhere and promotes crispiness.
Set up the breading station: Place flour seasoned with salt, pepper, garlic powder, and paprika in one shallow dish. Place the beaten eggs in a second dish. Mix the panko breadcrumbs and crushed cornflakes (if using) in a third dish.
Bread the chicken: Dredge each chicken piece first in the seasoned flour, shaking off excess. Dip into the egg mixture, letting excess drip off. Finally, press firmly into the breadcrumb mixture to coat completely. For extra crispiness, repeat the egg and breadcrumb dip (double-dip).
Chill the nuggets: Place the breaded nuggets on a wire rack set over a baking sheet. Refrigerate for at least 30 minutes. This helps the coating set.

Notes

To adapt for a healthier version, use whole wheat flour and skip the cornflakes.
