1 large egg, lightly beaten
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 cup pizza sauce or marinara
1/4 teaspoon dried oregano

Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
Wash the zucchini and slice them into rounds about 1/4 to 1/2 inch thick. These form your mini pizza cups.
Place the zucchini slices on a paper towel and sprinkle lightly with salt. Let them sit for 10 minutes to draw out excess moisture. Gently pat them dry with more paper towels. This step is important for crispy bites.
