Make a simple, creamy, and flavorful vegan chickpea salad filling to use as a substitute for tuna or chicken salad in sandwiches or wraps.

  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/2 cup vegan mayonnaise
  • 1/4 cup celery, finely chopped
  • 2 tablespoons red onion, finely minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 slices whole wheat bread or preferred bread
  • Optional: Lettuce leaves, tomato slices

Instructions

  1. Place the rinsed and drained chickpeas in a medium bowl.
  2. Use a fork or potato masher to mash the chickpeas until about two-thirds are broken down, leaving some texture remaining.
  3. Add the vegan mayonnaise, chopped celery, minced red onion, lemon juice, Dijon mustard, garlic powder, salt, and pepper to the bowl.
  4. Stir all ingredients together until well combined and creamy. Taste and adjust seasoning if needed.
  5. Divide the chickpea salad mixture evenly between two slices of bread.
  6. Top with lettuce and tomato slices, if using, and place the remaining bread slices on top.
  7. Slice the sandwiches in half and serve immediately, or store the filling for later use.

Notes

  • For a gluten-free option, serve the salad on gluten-free bread, lettuce wraps, or crackers.
  • If you prefer a smoother texture, blend the chickpeas briefly in a food processor before mixing with the other ingredients.
  • For extra tang, add 1/2 teaspoon of apple cider vinegar along with the lemon juice.
