A quick and creamy vegan Alfredo sauce recipe using a tofu base, offering a rich texture without cashews or coconut milk. This recipe makes a great dairy free pasta night staple.

  • 1 block (14 ounces) firm or extra-firm tofu, pressed
  • 1 cup unsweetened soy milk (or other non-dairy milk)
  • 4 cloves garlic, minced
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 cup vegan butter or olive oil
  • 1/4 cup reserved pasta water (for thinning)

Instructions

  1. Drain and press the tofu to remove excess water. Crumble the tofu into a high-speed blender.
  2. Add the soy milk, nutritional yeast, lemon juice, Dijon mustard, salt, and pepper to the blender.
  3. Blend on high until the mixture is completely smooth and silky. Scrape down the sides as needed.
  4. In a medium saucepan, melt the vegan butter or heat the olive oil over medium heat.
  5. Add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic brown.
  6. Pour the blended tofu mixture into the saucepan with the garlic and butter.
  7. Heat the sauce gently, stirring constantly, until it thickens slightly, about 3 to 5 minutes. Do not boil.
  8. If the sauce is too thick, stir in the reserved pasta water one tablespoon at a time until you reach your desired consistency.
  9. Taste and adjust salt and pepper as needed. Toss immediately with cooked fettuccine or your favorite pasta.

Notes

  • For a Vegan Fettuccine Alfredo, cook 1 pound of fettuccine according to package directions. Reserve at least 1/2 cup of the starchy cooking water before draining.
  • If you want a slightly richer flavor resembling the Olive Garden copycat style, add 1/4 teaspoon of onion powder and a pinch of dried oregano to the blender.
  • This sauce is naturally gluten free if you use gluten free pasta.
