1 3/4 cups all-purpose flour
1 cup packed brown sugar
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 large eggs
1/2 cup vegetable oil
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup grated carrots
1 cup chopped apple (peeled or unpeeled)
1/2 cup raisins
1/2 cup chopped pecans or walnuts
1/4 cup shredded unsweetened coconut
Instructions
Preheat your oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners or grease the cups well.
In a large bowl, whisk together the flour, brown sugar, baking soda, cinnamon, nutmeg, and salt.
In a separate medium bowl, whisk together the eggs, vegetable oil, applesauce, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
Fold in the grated carrots, chopped apple, raisins, nuts, and coconut until evenly distributed throughout the batter.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
Bake for 18 to 22 minutes, or until a wooden pick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For make-ahead storage, cool the muffins completely, then store them in an airtight container at room temperature for up to 3 days or freeze them for up to 3 months.
You can substitute pineapple chunks for the applesauce for added moisture if you prefer.
Use finely grated carrots for the best texture in the final muffin.
