A recipe for flavorful Thai peanut noodles loaded with fresh, crunchy vegetables and a homemade peanut sauce.

  • 8 ounces dried noodles (spaghetti, linguine, or rice noodles)
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded purple cabbage
  • 1/2 cup chopped scallions
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts, for garnish
  • For the Sauce:
  • 1/2 cup creamy peanut butter
  • 1/4 cup hot water
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced

Instructions

  1. Cook the noodles according to package directions. Drain them, rinse with cold water to stop cooking, and set aside.
  2. While the noodles cook, prepare the sauce. In a medium bowl, whisk together the peanut butter, hot water, soy sauce, rice vinegar, maple syrup, sesame oil, lime juice, ginger, and garlic until completely smooth. Add more hot water, one teaspoon at a time, if you need a thinner consistency.
  3. In a large bowl, combine the cooked noodles, shredded carrots, sliced bell pepper, shredded cabbage, scallions, and cilantro.
  4. Pour the peanut sauce over the noodle and vegetable mixture. Toss everything together until the noodles and vegetables are evenly coated.
  5. Serve immediately or chill for at least 30 minutes for a cold noodle dish. Garnish each serving with chopped peanuts.

Notes

  • For extra crunch, add 1/2 cup of fresh bean sprouts when tossing the noodles.
  • If you want to add protein, stir in 1 cup of cooked, cubed tofu or shredded cooked chicken when mixing the sauce in step 4.
  • To make this recipe vegan, use maple syrup instead of honey in the sauce.
