  • 1 lb salmon fillet
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 tablespoon sesame oil
  • 2 cups cooked rice
  • 1 cup steamed broccoli florets
  • 1/2 cup shredded carrots
  • 1/4 cup thinly sliced green onions
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, and garlic.
  3. Place salmon fillet on a baking sheet lined with parchment paper.
  4. Brush half of the teriyaki sauce over the salmon.
  5. Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork.
  6. While salmon is baking, heat sesame oil in a skillet over medium heat.
  7. Add cooked rice, broccoli, and carrots to the skillet. Stir-fry for 3-5 minutes until heated through.
  8. Remove salmon from oven and brush with the remaining teriyaki sauce.
  9. Divide the rice and vegetable mixture among two bowls.
  10. Top each bowl with a salmon fillet.
  11. Garnish with green onions and sesame seeds.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the teriyaki sauce.
  • Feel free to add other vegetables like snap peas or bell peppers.
  • You can use brown rice or quinoa instead of white rice.
