Whip up this quick and flavorful Teriyaki Chicken Stir-Fry for a delicious weeknight meal that will have you dancing in the kitchen!

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced bell pepper (any color)
  • 1/2 cup sliced onion
  • 2 cloves garlic, minced
  • 1/4 cup teriyaki sauce
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)
  • Chopped green onions, for garnish (optional)

Instructions

  1. In a medium bowl, toss chicken pieces with soy sauce and cornstarch.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add broccoli, carrots, bell pepper, and onion. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  4. Add minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
  5. In a small bowl, whisk together teriyaki sauce and honey.
  6. Return the cooked chicken to the skillet with the vegetables. Pour the teriyaki sauce mixture over everything.
  7. Stir gently to coat the chicken and vegetables. Cook for 2-3 minutes until the sauce has thickened and everything is heated through.
  8. Serve immediately over cooked rice. Garnish with sesame seeds and green onions if desired.

Notes

  • Feel free to add other vegetables like snap peas, mushrooms, or water chestnuts.
  • Adjust the amount of teriyaki sauce and honey to your preference.
  • For a spicier kick, add a pinch of red pepper flakes with the garlic and ginger.
