A simple, hearty breakfast casserole featuring layers of eggs, cheese, sausage, and a crispy tater tot topping.

  • 1 pound breakfast sausage, cooked and drained
  • 1 (30 ounce) bag frozen tater tots, thawed slightly
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 12 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Spread the slightly thawed tater tots in an even layer across the bottom of the prepared baking dish.
  3. Sprinkle the cooked sausage, onion, and bell pepper evenly over the tater tots.
  4. Mix the cheddar and Monterey Jack cheeses together, then sprinkle half of the cheese mixture over the sausage layer.
  5. In a separate bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  6. Pour the egg mixture slowly and evenly over the layers in the baking dish.
  7. Top the casserole with the remaining half of the cheese mixture.
  8. Bake for 45 to 55 minutes, or until the eggs are set and the tater tots on top are golden brown and crispy.
  9. Let the casserole rest for 5 minutes before slicing and serving.

Notes

  • For a make-ahead option, assemble the entire casserole through step 6, cover tightly with plastic wrap, and refrigerate for up to 12 hours. Add 10 to 15 minutes to the baking time if baking directly from the refrigerator.
  • To get the crispiest topping, ensure your tater tots are only slightly thawed before layering them.
  • You can substitute bacon for the sausage or add 1/4 cup of diced jalapeños for extra flavor.
