2 medium sweet potatoes, peeled and diced
1 tablespoon olive oil
1 small onion, chopped
1 red bell pepper, chopped
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and black pepper to taste
4 large eggs
Optional toppings: avocado, cilantro, hot sauce
Instructions
Preheat oven to 400°F (200°C).
Toss diced sweet potatoes with olive oil, salt, and pepper on a baking sheet.
Roast for 20-25 minutes, or until tender and slightly caramelized.
While sweet potatoes are roasting, heat a little oil in a large oven-safe skillet over medium heat.
Add chopped onion and bell pepper to the skillet and cook until softened, about 5-7 minutes.
Stir in chili powder and cumin, cooking for another minute until fragrant.
Add the roasted sweet potatoes to the skillet and stir to combine.
Create four wells in the hash mixture.
Carefully crack one egg into each well.
Transfer the skillet to the preheated oven.
Bake for 8-12 minutes, or until the egg whites are set but the yolks are still runny.
Serve immediately with your favorite toppings.
Notes
For a spicier hash, add a pinch of cayenne pepper with the chili powder and cumin.
If you don’t have an oven-safe skillet, you can cook the eggs separately in a non-stick pan.
Feel free to add other vegetables like spinach or mushrooms to the hash.
