1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup milk
3 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
2 tablespoons coarse sugar, for topping
Instructions
Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a medium bowl, whisk together the flour, baking powder, cinnamon, cardamom, and salt. Set aside.
In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined. Do not overmix the batter.
Spread half of the batter into the prepared cake pan. Arrange half of the sliced apples evenly over the batter. Spread the remaining batter over the apples. Top with the remaining apple slices, arranging them decoratively if desired.
Sprinkle the coarse sugar evenly over the top layer of apples.
Bake for 45 to 55 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
For a richer flavor, substitute 1/4 cup of the milk with heavy cream.
Serve this cake warm with a scoop of vanilla ice cream or a dollop of whipped cream.
You can add a light dusting of powdered sugar just before serving for a classic look.
