  • 6 cups fresh spinach, washed and dried
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup sliced almonds, toasted
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup red onion, thinly sliced
  • For the Dressing:
  • 1/2 cup vegetable oil
  • 1/4 cup white wine vinegar
  • 1/4 cup granulated sugar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon poppy seeds
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Prepare the dressing: In a small bowl, whisk together the vegetable oil, white wine vinegar, sugar, Dijon mustard, poppy seeds, salt, and pepper until well combined. Set aside.
  2. Assemble the salad: In a large bowl, combine the spinach, sliced strawberries, toasted almonds, feta cheese (if using), and red onion.
  3. Dress the salad: Pour the desired amount of poppy seed dressing over the salad ingredients. Toss gently to coat everything evenly.
  4. Serve immediately for the best texture.

Notes

  • For a different flavor, substitute pecans or walnuts for the almonds.
  • If you prefer a sharper taste, use apple cider vinegar instead of white wine vinegar in the dressing.
  • You can substitute goat cheese for feta cheese.
