Ingredients
Scale
6 cups fresh spinach, washed and dried
2 cups fresh strawberries, hulled and sliced
1/2 cup sliced almonds, toasted
1/4 cup crumbled feta cheese (optional)
1/4 cup red onion, thinly sliced
For the Dressing:
1/2 cup vegetable oil
1/4 cup white wine vinegar
1/4 cup granulated sugar
1 teaspoon Dijon mustard
1 teaspoon poppy seeds
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Prepare the dressing: In a small bowl, whisk together the vegetable oil, white wine vinegar, sugar, Dijon mustard, poppy seeds, salt, and pepper until well combined. Set aside.
Assemble the salad: In a large bowl, combine the spinach, sliced strawberries, toasted almonds, feta cheese (if using), and red onion.
Dress the salad: Pour the desired amount of poppy seed dressing over the salad ingredients. Toss gently to coat everything evenly.
Serve immediately for the best texture.
Notes
For a different flavor, substitute pecans or walnuts for the almonds.
If you prefer a sharper taste, use apple cider vinegar instead of white wine vinegar in the dressing.
You can substitute goat cheese for feta cheese.
This salad pairs well with grilled chicken or salmon.
