Make these light and airy strawberry pancakes from scratch. This easy recipe delivers fluffy pancakes bursting with fresh strawberries, perfect for a weekend brunch or sweet breakfast treat.

Ingredients

Scale
  • 2 1/4 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup melted and cooled salted butter
  • 3 tablespoons granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups fresh strawberries, sliced
  • For the Sauce: 1 cup fresh strawberries, 1/4 cup granulated sugar, 1 tablespoon lemon juice

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. This is the start of your light and airy pancakes.
  2. In a separate medium bowl, whisk the buttermilk, eggs, melted butter, sugar, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients. Gently mix until just combined. Do not overmix; a few lumps are fine for fluffy strawberry pancakes.
  4. Gently fold in the sliced fresh strawberries.
  5. Heat a griddle or large non-stick skillet over medium heat. Lightly grease the surface.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2 to 3 minutes per side, until golden brown and cooked through. Flip when bubbles appear on the surface.
  7. While the pancakes cook, make the sauce: Combine 1 cup of strawberries, 1/4 cup sugar, and lemon juice in a small saucepan. Cook over medium heat, stirring occasionally, until the strawberries break down and the sauce thickens slightly, about 8 minutes. Mash berries lightly with a fork.
  8. Stack your delicious pancake stack and top generously with the warm homemade strawberry sauce. Serve immediately for the best brunch ideas.

Notes

  • For extra fluffiness, let the batter rest for 5 minutes before cooking.
  • You can substitute regular milk for buttermilk by adding 2 teaspoons of white vinegar or lemon juice to 2 cups of regular milk and letting it sit for 5 minutes.
  • If you want strawberry cheesecake pancakes, swirl 2 tablespoons of softened cream cheese into the batter before cooking.
