Prepare this fast, flavorful shrimp stir fry featuring a thick, sticky teriyaki glaze. This recipe is perfect for a quick weeknight dinner.

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1/2 cup sliced carrots
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/4 cup soy sauce
  • 1/4 cup mirin (sweet rice wine)
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch mixed with 1 tbsp cold water (slurry)
  • 1 tsp sesame seeds, for garnish

Instructions

  1. In a small bowl, whisk together the soy sauce, mirin, brown sugar, rice vinegar, and sesame oil to make the sauce base. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the broccoli, bell pepper, and carrots. Stir fry for 3 to 4 minutes until vegetables are crisp-tender.
  4. Add the minced garlic and grated ginger to the skillet. Cook for 30 seconds until fragrant.
  5. Add the shrimp to the skillet. Cook for 2 to 3 minutes per side until pink and opaque.
  6. Pour the prepared sauce base over the shrimp and vegetables. Bring the sauce to a simmer.
  7. Stir the cornstarch slurry again and pour it slowly into the simmering sauce while stirring constantly. Cook for 1 minute until the sauce thickens and becomes sticky.
  8. Remove from heat. Serve immediately over cooked rice or noodles, garnished with sesame seeds.

Notes

  • For a complete meal, serve this stir fry over steamed white rice or ramen noodles.
  • You can substitute broccoli with snow peas or sliced mushrooms.
  • To make the sauce extra sticky, ensure you let it simmer briefly after adding the cornstarch slurry.
