1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1 cup jasmine rice
1.5 cups water (for rice)
1/4 cup soy sauce (low sodium preferred)
1/4 cup brown sugar, packed
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1/2 teaspoon sesame oil
1 tablespoon cornstarch
2 tablespoons cold water (for slurry)
1 tablespoon vegetable oil
Optional garnish: sliced green onions, toasted sesame seeds
Instructions
Rinse the jasmine rice under cold water until the water runs clear. Combine the rice and 1.5 cups of water in a small saucepan. Bring to a boil, then immediately reduce heat to the lowest setting, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 10 minutes. Do not lift the lid during this time.
While the rice cooks, prepare the sauce. In a small bowl, whisk together the soy sauce, brown sugar, honey, rice vinegar, ginger, garlic, and sesame oil. Set aside.
In a separate small bowl, mix the cornstarch and 2 tablespoons of cold water to create a slurry. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 6-8 minutes.
Pour the prepared soy sauce mixture over the cooked chicken in the skillet. Bring the sauce to a simmer.
Stir the cornstarch slurry once more and pour it slowly into the simmering sauce while stirring constantly. Continue to cook and stir for 1-2 minutes until the sauce thickens significantly and becomes sticky and glossy, coating the chicken well.
Fluff the cooked rice with a fork.
Serve the sticky sweet soy chicken immediately over the steamed rice. Garnish with green onions and sesame seeds if desired.
Notes
For extra flavor, marinate the chicken in half of the sauce mixture for 30 minutes before cooking.
If you prefer a milder glaze, reduce the honey by one tablespoon.
Use chicken thighs for a more tender result.
