1 tablespoon baking powder (aluminum-free)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon honey or maple syrup
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1 clove garlic, minced
Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top of the sheet.
Pat the chicken wings completely dry using paper towels. This step is key for crispiness.
In a large bowl, toss the dry wings with baking powder, salt, and pepper until evenly coated.
Arrange the wings in a single layer on the wire rack, ensuring space between each piece.
Bake for 25 minutes. Flip the wings and bake for another 15-20 minutes, or until the skin is golden brown and very crispy.
While the wings finish cooking, prepare the glaze: In a small saucepan, combine the sweet chili sauce, soy sauce, honey, rice vinegar, ginger, and garlic.
Bring the sauce mixture to a simmer over medium heat, stirring occasionally. Cook for 3-4 minutes until the sauce thickens slightly. Remove from heat.
Once the wings are cooked and crispy, transfer them to a large bowl. Pour the warm glaze over the wings.
Toss quickly until all wings are thoroughly coated in the sticky sauce.
Serve immediately while hot.
Notes
Using a wire rack allows air to circulate completely around the wings, which helps the bottom crisp up.
Do not skip drying the wings; excess moisture prevents crisping.
For an extra thick glaze, reduce the sauce slightly longer, but watch carefully to prevent burning the sugars.
