Prepare a flavorful, sticky orange chicken served over rice with mixed vegetables for a complete meal.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1 large carrot, sliced thinly
  • 1/2 cup orange juice, fresh or bottled
  • 1/4 cup soy sauce (low sodium preferred)
  • 3 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 teaspoon sriracha (optional)
  • 2 tablespoons water
  • 1 tablespoon cornstarch (for sauce thickening)
  • 2 cups cooked jasmine rice
  • 2 green onions, sliced (for garnish)

Instructions

  1. Toss the chicken pieces with 1 tablespoon of cornstarch until lightly coated.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
  3. Add the broccoli florets and sliced carrots to the same skillet. Stir-fry for 3-4 minutes until slightly tender-crisp. Remove the vegetables and set them aside with the chicken.
  4. In a small bowl, whisk together the orange juice, soy sauce, brown sugar, rice vinegar, ginger, garlic, sesame oil, and sriracha, if using.
  5. Pour the sauce mixture into the skillet. Bring it to a simmer over medium heat.
  6. In a separate small bowl, whisk together 2 tablespoons of water and 1 tablespoon of cornstarch to create a slurry. Pour the slurry into the simmering sauce, stirring constantly until the sauce thickens, about 1 minute.
  7. Return the cooked chicken and vegetables to the skillet. Toss everything gently to coat evenly with the sticky orange sauce. Cook for 1 minute to heat through.
  8. To serve, divide the cooked jasmine rice into bowls. Top with the sticky orange chicken and vegetable mixture. Garnish with sliced green onions.

Notes

  • For a crispier chicken texture, you can lightly dredge the cornstarch-coated chicken in flour before frying.
  • If you prefer less sweetness, reduce the brown sugar by one tablespoon.
  • Prepare the rice ahead of time to speed up the weeknight cooking process.
