Follow this recipe to make tender chicken coated in a thick, sweet, and sticky BBQ glaze, served over fluffy rice with fresh vegetable toppings.

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup uncooked white rice (Jasmine recommended)
  • 1.5 cups water (for rice)
  • 1 tablespoon vegetable oil
  • 1/2 cup ketchup
  • 1/4 cup brown sugar, packed
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 cup shredded cabbage (for topping)
  • 1/2 cup shredded carrots (for topping)
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. Cook the rice: Combine rice and water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  2. Prepare the sauce: In a small bowl, whisk together the ketchup, brown sugar, soy sauce, apple cider vinegar, smoked paprika, garlic powder, and black pepper. Set aside.
  3. Cook the chicken: Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 6 to 8 minutes. Drain any excess fat.
  4. Glaze the chicken: Pour the prepared BBQ sauce over the cooked chicken in the skillet. Bring the sauce to a simmer. Cook, stirring frequently, for 3 to 5 minutes, until the sauce thickens and coats the chicken pieces heavily, becoming sticky.
  5. Assemble the bowls: Divide the cooked rice among serving bowls. Top the rice with the sticky BBQ chicken.
  6. Add toppings: Place a small mound of shredded cabbage and carrots next to the chicken. Garnish with sliced green onions and sesame seeds. Serve immediately.

Notes

  • For crispier vegetables, quickly sauté the cabbage and carrots in a separate pan for 2 minutes before adding them as a topping.
  • You can substitute chicken breasts for thighs, but adjust cooking time to prevent drying.
  • If you prefer a thinner sauce, add 1 tablespoon of water to the sauce while simmering.
