Assemble fresh vegetables, herbs, and protein over rice noodles to create a vibrant bowl, topped with a creamy, homemade peanut sauce.

  • 8 oz rice vermicelli noodles
  • 1 block (14 oz) extra-firm tofu, pressed and cubed (or 1 lb cooked shrimp/chicken)
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon sesame oil
  • 4 cups shredded lettuce or cabbage mix
  • 1 large carrot, julienned
  • 1 cucumber, thinly sliced
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup chopped peanuts, for garnish
  • For the Peanut Sauce:
  • 1/2 cup creamy peanut butter
  • 1/4 cup warm water
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • Pinch of red pepper flakes (optional)

Instructions

  1. Cook the rice vermicelli noodles according to package directions. Drain and rinse with cold water to stop cooking. Set aside.
  2. If using tofu, toss the cubes with soy sauce and sesame oil. Pan-fry or bake the tofu until golden brown and slightly crispy. Set aside.
  3. Prepare the peanut sauce: In a medium bowl, whisk together the peanut butter, warm water, soy sauce, rice vinegar, honey or maple syrup, lime juice, minced garlic, grated ginger, and red pepper flakes until smooth. Add more warm water, one teaspoon at a time, if you need a thinner consistency.
  4. Assemble the bowls: Divide the cooked noodles among four serving bowls.
  5. Arrange the fresh ingredients over the noodles: top each bowl with lettuce or cabbage mix, julienned carrots, and sliced cucumber.
  6. Add your cooked protein (tofu, shrimp, or chicken) to each bowl.
  7. Drizzle a generous amount of the peanut sauce over the ingredients in each bowl.
  8. Garnish with fresh mint, cilantro, and chopped peanuts before serving.

Notes

  • For meal prep, store the sauce separately from the assembled bowls to keep the vegetables crisp.
  • Substitute rice noodles with shredded cabbage or lettuce for a lower-carb option.
  • If you prefer a tangier sauce, increase the rice vinegar slightly.
