A warm and festive spiked pumpkin eggnog recipe, perfect for celebrating the season and creating joyful kitchen moments.

Ingredients

  • 12 large eggs, separated
  • 1 cup granulated sugar, divided
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup dark rum (or to taste)
  • 1/4 cup brandy (optional)
  • 1/4 cup bourbon (optional)

Instructions

  1. In a large bowl, whisk together the egg yolks and 1/2 cup of the granulated sugar until pale and creamy.
  2. Stir in the whole milk, heavy cream, pumpkin puree, pumpkin pie spice, cinnamon, nutmeg, and salt. Mix until well combined.
  3. Cook the mixture over medium-low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Do not boil.
  4. Remove from heat and stir in the dark rum, brandy (if using), and bourbon (if using).
  5. In a separate clean bowl, beat the egg whites until stiff peaks form.
  6. Gradually add the remaining 1/2 cup of granulated sugar to the egg whites while continuing to beat until glossy.
  7. Gently fold the whipped egg whites into the pumpkin eggnog mixture until just combined.
  8. Chill thoroughly before serving.
  9. Serve cold, garnished with a sprinkle of cinnamon or nutmeg if desired.

Notes

  • For a non-alcoholic version, omit the rum, brandy, and bourbon.
  • Adjust the amount of alcohol to your preference.
  • Ensure the eggnog is well chilled before serving for the best flavor and texture.
