- 12 large eggs, separated
- 1 cup granulated sugar, divided
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup dark rum (or to taste)
- 1/4 cup brandy (optional)
- 1/4 cup bourbon (optional)
- In a large bowl, whisk together the egg yolks and 1/2 cup of the granulated sugar until pale and creamy.
- Stir in the whole milk, heavy cream, pumpkin puree, pumpkin pie spice, cinnamon, nutmeg, and salt. Mix until well combined.
- Cook the mixture over medium-low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Do not boil.
- Remove from heat and stir in the dark rum, brandy (if using), and bourbon (if using).
- In a separate clean bowl, beat the egg whites until stiff peaks form.
- Gradually add the remaining 1/2 cup of granulated sugar to the egg whites while continuing to beat until glossy.
- Gently fold the whipped egg whites into the pumpkin eggnog mixture until just combined.
- Chill thoroughly before serving.
- Serve cold, garnished with a sprinkle of cinnamon or nutmeg if desired.

- For a non-alcoholic version, omit the rum, brandy, and bourbon.
- Adjust the amount of alcohol to your preference.
