Spicy Turkey White Bean Chili

Make this hearty and spicy chili using lean ground turkey and creamy white beans. This recipe is quick enough for a weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced green chilies, undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (or more for extra heat)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 (15 ounce) cans Great Northern beans, rinsed and drained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 4 cups chicken broth
  • 1/2 cup chopped fresh cilantro (for garnish)
  • 1/2 cup shredded Monterey Jack cheese (optional topping)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, cumin, oregano, chili powder, cayenne pepper, salt, and black pepper. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth, diced green chilies (both cans), rinsed Great Northern beans, and rinsed cannellini beans.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for at least 20 minutes to allow the flavors to combine. Simmer longer for a deeper flavor.
  6. Taste and adjust seasonings, adding more salt or cayenne pepper if desired.
  7. Serve hot, garnished with fresh cilantro and shredded cheese, if using.

Notes

  • For a thicker chili, remove about 1 cup of the beans and mash them, then stir the mash back into the pot during the last 10 minutes of simmering.
  • If you prefer a slow cooker method, brown the turkey and sauté the onions and spices first, then transfer everything to the slow cooker and cook on low for 6 to 8 hours or high for 3 to 4 hours.
