Whip up these easy and flavorful Spicy Thai Peanut Noodles for a quick weeknight dinner that’s packed with bold taste. Perfect for anyone looking to add some excitement to their mealtime.

  • 1 pound spaghetti or linguine
  • 1/2 cup smooth peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sriracha (or more, to taste)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 cup hot water, or as needed
  • Optional toppings: chopped peanuts, cilantro, green onions, lime wedges

Instructions

  1. Cook spaghetti according to package directions. Reserve about 1/2 cup of the pasta water before draining.
  2. While the pasta is cooking, whisk together peanut butter, soy sauce, rice vinegar, sriracha, honey or maple syrup, ginger, and garlic in a medium bowl.
  3. Gradually whisk in the hot water, a tablespoon at a time, until the sauce reaches your desired consistency. It should be smooth and pourable.
  4. Add the drained, hot spaghetti to the bowl with the peanut sauce. Toss well to coat the noodles evenly. If the sauce seems too thick, add a little of the reserved pasta water to loosen it up.
  5. Serve immediately, garnished with your favorite toppings like chopped peanuts, fresh cilantro, sliced green onions, and a squeeze of lime.

Notes

  • Adjust the amount of sriracha to control the spice level.
  • If you don’t have rice vinegar, apple cider vinegar can be substituted.
  • For a vegan option, use maple syrup instead of honey.
