One-Hour Sourdough Discard Dinner Rolls

Make soft, fluffy dinner rolls quickly using your excess sourdough discard. These rolls bake in about an hour and feature a rich, buttery finish.

  • 1 cup active sourdough discard (unfed)
  • 1 cup warm milk (about 105-115°F)
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted, plus 2 tablespoons for topping
  • 1 large egg
  • 1 teaspoon salt
  • 3 1/2 cups all-purpose flour, plus more for dusting
  • 2 cloves garlic, minced (for topping)

Instructions

  1. Combine the warm milk and yeast in a small bowl. Let stand for 5 minutes until foamy.
  2. In a large bowl, whisk together the sourdough discard, sugar, melted butter (1/2 cup), and egg.
  3. Add the yeast mixture and salt to the wet ingredients and mix well.
  4. Gradually add the flour, mixing until a shaggy dough forms.
  5. Turn the dough out onto a lightly floured surface. Knead for 5 to 7 minutes until the dough is smooth and elastic. It will be slightly sticky.
  6. Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap or a damp towel. Let the dough rise in a warm place for 30 minutes, or until doubled in size.
  7. Gently punch down the risen dough. Divide it into 12 equal pieces. Roll each piece into a smooth ball.
  8. Arrange the dough balls in a greased 9×13 inch baking pan, leaving a small space between them for expansion.
  9. Cover the pan loosely and let the rolls rest for a second rise for 15 minutes. Preheat your oven to 375°F (190°C) during this time.
  10. Bake for 18 to 20 minutes, or until the tops are golden brown.
  11. While the rolls are hot, melt the remaining 2 tablespoons of butter. Stir in the minced garlic. Brush this garlic butter mixture evenly over the tops of the warm rolls.
  12. Serve warm.

Notes

  • If you prefer a stronger sourdough tang, use discard that has been refrigerated for several days.
  • For pull-apart rolls, place the dough balls closer together in the pan.
  • You can substitute regular melted butter for the garlic butter topping if desired.
