Make authentic, flavorful Cajun Red Beans and Rice using your slow cooker. This hands-off recipe uses smoked meats for deep flavor.

  • 1 pound dried red kidney beans, rinsed and picked over
  • 1 pound smoked andouille sausage, sliced
  • 1 smoked ham hock
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 bay leaf
  • Salt and black pepper to taste
  • Cooked white rice, for serving

Instructions

  1. Place the rinsed red beans, andouille sausage, and ham hock into the basin of your slow cooker.
  2. Add the chopped onion, bell pepper, celery, and minced garlic to the slow cooker.
  3. Pour in the chicken broth.
  4. Stir in the thyme, smoked paprika, cayenne pepper, and bay leaf.
  5. Cover the slow cooker and cook on low for 7 to 8 hours or on high for 3 to 4 hours, until the beans are very tender.
  6. Remove the ham hock. Shred any meat from the hock and return the shredded meat to the pot. Discard the bone and skin.
  7. Remove the bay leaf. Stir the beans well. If the mixture is too thin, remove the lid and cook on high for 30 minutes to allow some liquid to evaporate.
  8. Taste and adjust seasoning with salt and pepper.
  9. Serve hot over cooked white rice.

Notes

  • For a creamier texture, mash about 1 cup of the beans against the side of the slow cooker before serving.
  • If you do not have smoked ham hocks, substitute with 1 cup of smoked ham hock broth or 1/2 cup of chopped smoked ham.
  • Rinsing the dried beans is necessary, but soaking them overnight is optional for this slow cooker method.
