- 2 pounds beef chuck roast, cut into 1-inch pieces
- 1 cup sliced mushrooms
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 can (10.5 ounces) condensed cream of mushroom soup
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup sour cream
- 2 tablespoons chopped fresh parsley, for garnish
- Cooked egg noodles, for serving
- Place beef, mushrooms, onion, and garlic in your slow cooker.
- In a bowl, whisk together the cream of mushroom soup, beef broth, Worcestershire sauce, salt, and pepper. Pour over the beef mixture.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
- Stir in the sour cream during the last 30 minutes of cooking.
- Serve the beef stroganoff over cooked egg noodles.
- Garnish with fresh parsley before serving.
