Make a hearty, cheesy lasagna flavor in under 30 minutes using just one skillet for simple cleanup. This recipe uses cottage cheese for a quick, creamy filling.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1/2 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (24 ounce) jar marinara sauce
  • 1 (15 ounce) can tomato sauce
  • 1 cup water
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 9 oven-ready lasagna noodles, broken into thirds
  • 1 (15 ounce) container cottage cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese, plus more for topping
  • 2 cups shredded mozzarella cheese

Instructions

  1. Heat the olive oil in a large, deep oven-safe skillet over medium-high heat. Add the ground beef and sausage. Cook, breaking up the meat, until browned. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the marinara sauce, tomato sauce, water, basil, oregano, salt, and pepper. Bring the mixture to a simmer.
  4. Nestle the broken lasagna noodles into the sauce mixture, ensuring they are mostly submerged. Cover the skillet and reduce heat to medium-low. Cook for 10 to 12 minutes, or until the noodles are tender. Stir gently halfway through to prevent sticking.
  5. While the noodles cook, mix the cottage cheese, egg, and Parmesan cheese in a small bowl until combined.
  6. Once the noodles are tender, remove the skillet from the heat. Drop spoonfuls of the cottage cheese mixture evenly over the top of the sauce.
  7. Sprinkle the mozzarella cheese over the top. Cover the skillet again and let it stand for 5 minutes, allowing the cheese to melt completely.
  8. Remove the lid, sprinkle with extra Parmesan cheese, and serve directly from the skillet.

Notes

  • If you do not have oven-ready noodles, use standard lasagna noodles and boil them according to package directions before adding them to the sauce.
  • For a richer flavor, substitute half of the water with dry red wine when simmering the sauce.
  • You can substitute ricotta cheese for cottage cheese if preferred.
