A simple and delicious Shrimp Scampi Linguine recipe. This dish features succulent shrimp tossed with linguine pasta in a rich, buttery garlic sauce. It’s perfect for a weeknight meal or a special occasion.

  • 1 pound linguine
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine (optional)
  • Juice of 1/2 lemon
  • 1/4 cup chopped fresh parsley
  • 1 pound large shrimp, peeled and deveined
  • Salt and freshly ground black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook linguine according to package directions. Reserve about 1/2 cup of pasta water before draining.
  2. While pasta is cooking, melt butter in a large skillet over medium heat.
  3. Add minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
  4. If using, add white wine and lemon juice to the skillet. Let it simmer for 1-2 minutes to reduce slightly.
  5. Add the shrimp to the skillet. Season with salt, pepper, and red pepper flakes if desired. Cook for 2-3 minutes per side, until pink and cooked through.
  6. Add the drained linguine to the skillet with the shrimp and sauce.
  7. Toss to combine, adding a little reserved pasta water if needed to create a smooth sauce that coats the pasta.
  8. Stir in fresh parsley.
  9. Serve immediately.

Notes

  • You can adjust the amount of garlic to your preference.
  • For a spicier dish, add more red pepper flakes.
  • If you don’t have white wine, you can skip it or use a little more lemon juice and pasta water.
