Ingredients
Scale
1.5 lb Italian sausage links (sweet or hot)
3 large bell peppers (mixed colors), sliced
1 large yellow onion, sliced
2 tablespoons olive oil
1 teaspoon dried Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper for easier cleanup.
In a large bowl, combine the sliced bell peppers and onion.
Drizzle the vegetables with olive oil, Italian seasoning, garlic powder, salt, and pepper. Toss until everything is evenly coated.
Arrange the sausage links among the vegetables on the prepared baking sheet. Do not overcrowd the pan; use two pans if necessary for better browning.
Bake for 25 to 30 minutes, flipping the sausage and stirring the vegetables halfway through the cooking time. The sausage should be browned and cooked through, and the vegetables should be tender and slightly caramelized.
Remove from the oven and serve immediately.
Notes
For crispier vegetables, you can place the vegetables on the pan first for 10 minutes before adding the sausage.
Use pre-cooked sausage if you prefer a shorter cooking time, reducing the bake time to about 15 minutes.
Serve this dish over cooked rice, pasta, or inside hoagie rolls.
