2 large red bell peppers
1 (15-ounce) can chickpeas, rinsed and drained
1/4 cup tahini
2 tablespoons fresh lemon juice
1 clove garlic, minced
2 tablespoons olive oil, plus extra for serving
1/2 teaspoon salt
1/4 teaspoon ground cumin
2 to 4 tablespoons ice water (optional, for thinning)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Place the whole red peppers on a baking sheet. Roast for 25 to 30 minutes, turning occasionally, until the skins are blackened and blistered.
Place the hot peppers in a heatproof bowl and cover tightly with plastic wrap. Let them steam for 10 minutes. This makes peeling easier.
Peel the charred skin from the peppers. Remove the stems and seeds. Roughly chop the roasted pepper flesh.
Combine the roasted peppers, chickpeas, tahini, lemon juice, garlic, 2 tablespoons of olive oil, salt, and cumin in a food processor.
Process the mixture until completely smooth, scraping down the sides as needed. This may take 3 to 5 minutes for the creamiest texture.
If the hummus is too thick, add ice water one tablespoon at a time while the processor is running until you reach your desired consistency.
Taste and adjust salt or lemon juice if necessary.
Transfer the hummus to a serving bowl. Drizzle with extra olive oil before serving.
Notes
For a spicier dip, add a pinch of cayenne pepper or a dash of hot sauce during processing.
Serve this hummus with pita bread, vegetable sticks, or use it as a sandwich spread.
If you do not want to roast the peppers yourself, you can substitute 1 cup of jarred roasted red peppers, drained well.
