Make simple roasted carrots taste incredible with this sweet and savory honey garlic glaze. This easy, gluten-free side dish caramelizes perfectly in the oven, making it a staple for weeknight dinners and holiday tables.

  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons butter, melted (or brown butter for extra flavor)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for simple cleanup.
  2. Place the cut carrots onto the prepared baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat them evenly. Spread the carrots into a single layer.
  3. Roast the carrots for 20 minutes. This step starts the caramelization process.
  4. While the carrots roast, prepare the glaze. In a small bowl, whisk together the minced garlic, honey, and melted butter until fully combined.
  5. Remove the baking sheet from the oven. Drizzle the honey garlic mixture evenly over the partially roasted carrots. Toss gently right on the pan to coat every piece.
  6. Return the carrots to the oven and roast for another 10 to 15 minutes, or until the carrots are tender and the glaze is bubbly and slightly caramelized. Watch closely during the last few minutes to prevent burning.
  7. Remove from the oven. Garnish immediately with fresh chopped parsley. Serve your delicious roasted carrots hot.

  • For the best flavor, use fresh carrots. Frozen or pre-cut varieties may release too much water during roasting.
  • If you want a deeper, nuttier flavor, melt the butter slowly in a small pan until the milk solids brown slightly (brown butter), then mix it into the glaze ingredients.
  • This recipe works well with other root vegetables like parsnips mixed in.
  • To achieve that tender-crisp texture, make sure you do not overcrowd the baking sheet; use two sheets if necessary.
