  • 1 cup whole milk ricotta cheese
  • 2 tablespoons heavy cream
  • 1 tablespoon honey, plus extra for drizzling
  • 1/4 teaspoon vanilla extract
  • Pinch of fine sea salt
  • Flaky sea salt, for finishing

Instructions

  1. Place the ricotta cheese, heavy cream, 1 tablespoon of honey, vanilla extract, and fine sea salt into a food processor or a bowl if using a hand mixer.
  2. Process or whip the mixture for 2 to 3 minutes until it becomes light, smooth, and airy. Scrape down the sides as needed.
  3. Toast the bread slices until golden brown and crisp.
  4. Spread a generous layer of the whipped ricotta mixture evenly over each slice of toast.
  5. Drizzle extra honey over the ricotta.
  6. Sprinkle with flaky sea salt before serving immediately.

Notes

  • For a savory version, skip the vanilla and honey, and top with cracked black pepper and fresh thyme instead.
