Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This step helps create the soft texture.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon extract, if using.
Mix in the well-drained ricotta cheese until just combined. Do not overmix.
In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. You want cakey ricotta cookies, so stop mixing once incorporated.
Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. These are no roll cookies, so shaping is minimal.
