1 pound dried small red beans, rinsed and picked over
6 cups chicken broth
1 pound Andouille sausage, sliced into half-inch pieces
1 large yellow onion, chopped
1 green bell pepper, chopped
2 celery stalks, chopped
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to taste)
1 bay leaf
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper
Cooked white rice, for serving
Instructions
Add the rinsed red beans, chicken broth, Andouille sausage, onion, bell pepper, celery, garlic, thyme, smoked paprika, cayenne pepper, and bay leaf to the Instant Pot liner.
Stir all ingredients together well.
Secure the lid and set the vent to sealing.
Cook on High Pressure (Manual/Pressure Cook) for 35 minutes.
Allow for a Natural Pressure Release (NPR) for 15 minutes, then carefully quick release any remaining pressure.
Remove the bay leaf. Stir the beans well. If the mixture is too thin, remove about 1 cup of the beans and mash them, then stir the mash back into the pot to thicken the mixture.
Stir in the salt and black pepper. Taste and adjust seasonings as needed.
Serve hot over cooked white rice.
Notes
For a creamier texture, mash about one-quarter of the cooked beans against the side of the pot before serving.
You can substitute smoked sausage with smoked ham hock or tasso ham for a different flavor profile.
This dish tastes even better the next day after the flavors have fully developed.
