  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup pumpkin puree
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
  2. In a separate bowl, whisk together the eggs, milk, pumpkin puree, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Preheat your waffle iron according to the manufacturer’s instructions.
  5. Pour about 1/2 cup of batter onto the hot waffle iron and cook until golden brown and cooked through, usually 3-5 minutes.
  6. Repeat with the remaining batter.
  7. Serve warm with your favorite toppings.

Notes

  • For crispier waffles, you can brush the waffle iron with a little melted butter or cooking spray before each use.
  • If you don’t have all the individual spices, a pumpkin pie spice blend can be used in their place. Use about 2 teaspoons of pumpkin pie spice.
  • Leftover batter can be stored in the refrigerator for up to 2 days.
