Ingredients

Scale
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 4 large eggs
  • 1 cup vegetable oil
  • 1 cup pumpkin puree
  • 0.5 cup buttermilk
  • 1 teaspoon vanilla extract
  • For the Cream Cheese Frosting:
  • 8 ounces cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, whisk together the eggs, vegetable oil, pumpkin puree, buttermilk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  8. While the cake cools, prepare the frosting. In a medium bowl, beat the softened cream cheese and butter until smooth.
  9. Gradually add the powdered sugar, alternating with the milk, and beat until well combined and creamy. Stir in the vanilla extract.
  10. Once the cake is completely cool, spread the cream cheese frosting evenly over the top.

Notes

  • Ensure your cream cheese and butter are at room temperature for the frosting to mix smoothly.
  • For a stronger spice flavor, you can add an extra teaspoon of cinnamon.
  • This cake can be stored in an airtight container at room temperature for up to 3 days, or refrigerated for up to a week.
