1 cup rolled oats
1/2 cup pumpkin puree
1/4 cup almond butter
1/4 cup maple syrup
1 egg
1 tsp pumpkin pie spice
1/2 tsp baking soda
1/4 tsp salt
Optional: 1/4 cup chopped nuts or seeds
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, combine the rolled oats, pumpkin puree, almond butter, maple syrup, and egg.
Stir in the pumpkin pie spice, baking soda, and salt. Mix until well combined.
If using, fold in optional nuts or seeds.
Drop spoonfuls of the cookie dough onto the prepared baking sheet. Flatten each cookie slightly with the back of the spoon.
Bake for 12-15 minutes, or until the edges are golden brown and the cookies are set.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a vegan option, use a flax egg (1 tbsp flaxseed meal + 3 tbsp water, let sit for 5 minutes) instead of an egg.
You can add a splash of vanilla extract for extra flavor.
Store cooled cookies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
