  • 4 ounces cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In a large bowl, cream together the 1 1/2 cups granulated sugar and softened butter until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the 1 teaspoon vanilla extract.
  5. Add the pumpkin puree and buttermilk to the wet ingredients and mix until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. In a small bowl, beat the softened cream cheese with the 2 tablespoons granulated sugar and 1/4 teaspoon vanilla extract until smooth.
  8. Spoon about two-thirds of the pumpkin batter into the prepared muffin cups.
  9. Drop a teaspoon of the cream cheese mixture onto the center of each muffin.
  10. Top with the remaining pumpkin batter, covering the cream cheese mixture.
  11. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  12. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
