Ingredients
Scale
1 cup Fairlife Skim Milk (or other high-protein milk)
1 scoop Vanilla Whey or Casein Protein Powder
1/2 teaspoon Xanthan Gum (optional, for extra creaminess)
1/4 teaspoon Vanilla Extract
Sweetener to taste (e.g., 1-2 packets zero-calorie sweetener)
Instructions
Combine the Fairlife milk, protein powder, xanthan gum (if using), vanilla extract, and sweetener in a Ninja Creami pint container.
Whisk or blend the mixture thoroughly until the protein powder is fully dissolved and there are no clumps.
Secure the lid on the pint and place it in the freezer for 24 hours until completely solid.
Once frozen solid, place the pint into the outer bowl and lock it into your Ninja Creami machine.
Select the ‘Lite Ice Cream’ or ‘Ice Cream’ setting and run the cycle.
Check the texture. If it is crumbly, add a splash of milk (about 1 tablespoon) and run the ‘Re-spin’ function.
Continue to re-spin with small liquid additions until you achieve a smooth, creamy texture.
Serve immediately for the best results.
Notes
For the best texture, use a blend of whey and casein protein powder, or use a casein-heavy blend.
Xanthan gum helps prevent ice crystal formation, leading to a smoother, low-calorie ice cream.
This base recipe yields approximately 25-35g of protein per pint, depending on your protein powder choice.
If you do not have a Creami, you can use this base in a standard ice cream maker or try a no-churn method with cottage cheese.
