Slow Cooker Pork Roast and Sauerkraut for Good Luck

Make this easy Slow Cooker Pork Roast with Sauerkraut and Apples for a comforting, traditional meal. It is perfect for New Year’s Day good luck or any cozy weeknight dinner.

  • 3 lb pork shoulder roast
  • 1 (32 ounce) bag sauerkraut, drained
  • 2 large apples, cored and sliced
  • 1 large yellow onion, sliced
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup chicken broth

Instructions

  1. Place the sliced onions in the bottom of your slow cooker.
  2. Place the pork roast on top of the onions.
  3. In a bowl, mix the drained sauerkraut, sliced apples, caraway seeds, pepper, and salt.
  4. Spread the sauerkraut and apple mixture evenly over the pork roast.
  5. Pour the chicken broth around the sides of the roast.
  6. Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the pork is very tender.
  7. Remove the pork roast and shred it using two forks. Return the shredded pork to the slow cooker and stir it into the sauerkraut mixture.
  8. Serve hot. This is a great New Year’s Day meal for good luck.

Notes

  • For extra flavor, you can sear the pork roast in a hot skillet before placing it in the slow cooker.
  • If you prefer a less tangy flavor, rinse the sauerkraut lightly before draining.
  • Serve this hearty meal with mashed potatoes or rye bread to soak up the juices.
