Make superior pizza dough from scratch tonight. This simple recipe uses few ingredients and requires minimal rising time for a perfect chewy and crispy crust.

Ingredients

Scale
  • 1 1/2 cups warm water (about 105-115°F)
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon sugar
  • 3 3/4 cups all-purpose flour, plus more for dusting
  • 2 teaspoons salt
  • 2 tablespoons olive oil, plus more for the bowl

Instructions

  1. Combine the warm water, yeast, and sugar in a large bowl. Let this mixture sit for 5 to 10 minutes until it becomes foamy. This shows the yeast is active.
  2. Add the flour, salt, and olive oil to the yeast mixture.
  3. Mix with a wooden spoon or stand mixer until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface. Knead for 5 to 7 minutes until the dough is smooth and elastic. If using a stand mixer, use the dough hook for 5 minutes on medium-low speed.
  5. Lightly oil a large bowl. Place the dough in the bowl and turn it over to coat lightly with oil.
  6. Cover the bowl tightly with plastic wrap or a clean kitchen towel. Let the dough rise in a warm spot for 1 hour, or until it has doubled in size.
  7. Punch the dough down gently. Divide it into two equal balls for two medium pizzas, or three for smaller pizzas.
  8. Shape the dough as desired and top with your favorite ingredients. Bake according to your pizza recipe instructions.

Notes

  • For a crispier crust, let the dough rest for 15 minutes after shaping before adding toppings.
  • You can make this dough ahead of time; store it tightly wrapped in the refrigerator for up to 3 days. Bring to room temperature before using.
  • If you want a slightly chewier texture, use bread flour instead of all-purpose flour.
