Make a thick, tropical smoothie using frozen pineapple and creamy coconut milk.

Ingredients

  • 2 cups frozen pineapple chunks
  • 1 cup unsweetened coconut milk (full-fat canned for best results)
  • 1/2 cup water or additional coconut milk
  • 1 tablespoon shredded unsweetened coconut
  • 1 teaspoon lime juice (optional)
  • 1 tablespoon sweetener (honey, maple syrup, or agave, adjust to taste)

Instructions

  1. Place the frozen pineapple chunks, coconut milk, water, shredded coconut, lime juice, and sweetener into a high-speed blender.
  2. Start blending on a low speed to break down the frozen fruit, then gradually increase to high speed.
  3. Blend until the mixture is completely smooth and creamy. Stop and scrape down the sides if necessary.
  4. If the smoothie is too thick, add a small amount of water or coconut milk until you reach your desired consistency.
  5. Pour immediately into glasses and serve.

  • Use frozen pineapple to achieve a thick, cold texture without needing ice, which can dilute the flavor.
