1 cup very ripe Hachiya persimmon puree (about 2-3 persimmons)
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup powdered sugar (for glaze)
2 tablespoons milk or water (for glaze)
1/2 teaspoon vanilla extract (for glaze)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the persimmon puree, egg, and vanilla extract until just combined.
In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10 to 12 minutes, or until the edges are set. The centers should remain soft.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
To make the glaze, whisk together the powdered sugar, milk or water, and vanilla extract until smooth. Add more liquid, one teaspoon at a time, if the glaze is too thick.
Once cookies are completely cool, drizzle or spread the vanilla glaze over the tops. Allow the glaze to set before serving.
Notes
Use only fully ripe, soft Hachiya persimmons for the best flavor and texture in this recipe.
For a holiday look, add a sprinkle of colored sugar or finely chopped nuts on top of the wet glaze.
You can substitute half of the granulated sugar with packed light brown sugar for a deeper molasses flavor.
