Make these simple, chewy peppermint chocolate chip cookies perfect for the holidays. This recipe uses crushed candy canes for an extra festive crunch and strong mint flavor.

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup dark chocolate chips
  • 1/2 cup crushed peppermint candy canes, plus extra for topping

Instructions

  1. Preheat your oven to 375 degrees F. Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time. Mix in the vanilla extract and peppermint extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Stir in the semi-sweet chocolate chips, dark chocolate chips, and 1/2 cup of the crushed candy canes.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Press a few extra crushed candy cane pieces onto the top of each dough ball, if desired.
  9. Bake for 9 to 11 minutes, or until the edges are set and the centers look slightly soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra chewy cookie, slightly underbake them by about one minute.
  • If you prefer a stronger chocolate flavor, substitute half of the semi-sweet chips with dark chocolate chips.
  • Store cooled cookies in an airtight container at room temperature for up to 5 days.
