Ingredients

Scale
  • 1 sleeve graham crackers (about 9 full sheets)
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups pecan halves, lightly toasted
  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil (optional, for drizzling)

Instructions

  1. Preheat your oven to 350 degrees F. Line a 10×15 inch baking sheet with parchment paper, letting the paper hang over the sides for easy removal later.
  2. Arrange the graham crackers in a single layer on the prepared baking sheet, breaking them slightly to fit if necessary. You want a solid base layer.
  3. In a small saucepan, combine the butter and brown sugar. Heat over medium heat, stirring constantly until the butter is melted and the sugar is completely dissolved, about 3 to 4 minutes. Bring the mixture to a gentle boil and let it boil for exactly 1 minute without stirring.
  4. Remove the mixture from the heat. Stir in the vanilla extract and salt quickly.
  5. Pour the hot toffee mixture evenly over the graham crackers, spreading it quickly to cover the entire surface.
  6. Sprinkle the toasted pecans evenly over the hot toffee layer.
  7. Bake for 10 to 12 minutes, or until the edges of the toffee are bubbly. Watch carefully to prevent burning.
  8. Remove the pan from the oven. Immediately sprinkle the chocolate chips over the hot pecan topping. Let it sit for 5 minutes to soften.
  9. Gently spread the softened chocolate into an even layer. If you want a drizzle effect, mix the chocolate chips with 1 teaspoon of coconut oil and drizzle over the top.
  10. Place the baking sheet in the refrigerator and chill for at least 1 hour, or until the bark is completely firm.
  11. Once firm, lift the bark out using the parchment paper overhang. Break the Pecan Pie Bark into rustic, bite-sized pieces. Store in an airtight container.

Notes

  • To toast your pecans, spread them on a dry skillet over medium heat for 5 to 7 minutes, stirring often until fragrant.
  • For a richer flavor, you can substitute shortbread cookies for the graham crackers in the base layer.
  • This Crunchy Pecan Dessert makes incredible homemade pecan gifts when packaged in small jars or cellophane bags.
