1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
1 tsp dried Italian seasoning
1/2 tsp red pepper flakes (optional)
4 cups chicken broth
1 (14.5 oz) can diced tomatoes, undrained
1 cup heavy cream
4 cups uncooked pasta
1/2 cup grated Parmesan cheese
2 cups fresh spinach
Salt and freshly ground black pepper to taste
Instructions
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken from the pot and set aside.
Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic, Italian seasoning, and red pepper flakes (if using) and cook for 1 minute more until fragrant.
Pour in chicken broth and diced tomatoes. Bring to a boil, scraping up any browned bits from the bottom of the pot.
Stir in heavy cream and uncooked pasta. Return the browned chicken to the pot.
Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until pasta is al dente and sauce has thickened, stirring occasionally.
Stir in grated Parmesan cheese and fresh spinach. Cook until spinach is wilted, about 2-3 minutes.
Season with salt and pepper to taste. Serve hot.
Notes
For extra flavor, you can add sun-dried tomatoes or Kalamata olives.
Adjust red pepper flakes to your spice preference.
If the sauce is too thick, add a little more chicken broth or water.
