Cook this rich and flavorful Tuscan Chicken Pasta entirely in one pot for easy cleanup. This recipe combines tender chicken, spinach, sun-dried tomatoes, and a creamy Parmesan sauce.

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 12 ounces dry penne or rotini pasta
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove the chicken and set it aside.
  3. Add the chopped onion to the same pot and cook until softened, about 3 minutes. Add the minced garlic and Italian seasoning, cooking for 1 minute until fragrant.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Add the dry pasta and the chopped sun-dried tomatoes to the boiling broth. Stir well.
  6. Reduce the heat to medium-low, cover the pot, and simmer for 12 to 15 minutes, stirring occasionally, until the pasta is cooked al dente and most of the liquid is absorbed.
  7. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
  8. Return the cooked chicken to the pot. Add the fresh spinach and stir until the spinach wilts, about 1 to 2 minutes.
  9. Taste and adjust salt and pepper if needed before serving immediately.

Notes

  • If the sauce seems too thick, add a splash more broth or milk while stirring in the cream.
  • You can substitute dried oregano for Italian seasoning if necessary.
  • This dish reheats well; add a small amount of liquid when reheating to restore creaminess.
