4 salmon fillets (about 6 oz each)
1 pound fresh asparagus, trimmed
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lemon, thinly sliced
2 tablespoons fresh lemon juice
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
In a small bowl, mix the olive oil, minced garlic, oregano, salt, and pepper.
Place the trimmed asparagus on one side of the prepared baking sheet. Drizzle half of the oil mixture over the asparagus and toss to coat evenly. Spread the asparagus into a single layer.
Place the salmon fillets on the other side of the baking sheet. Brush the remaining oil mixture evenly over the tops of the salmon fillets.
Squeeze the fresh lemon juice over the salmon and place two thin lemon slices on top of each fillet.
Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender-crisp.
Serve immediately directly from the pan.
Notes
For crispier asparagus, you can roast the asparagus alone for 5 minutes before adding the salmon to the pan.
You can substitute broccoli florets or green beans for the asparagus. Adjust cooking time if using thicker vegetables.
Use salmon portions of similar thickness to ensure even cooking.
