Cook tender steak bites and potatoes together in one pan using a rich garlic butter sauce for a simple, quick weeknight dinner with minimal cleanup.

Ingredients

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs small Yukon Gold potatoes, quartered
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place the quartered potatoes on a large baking sheet. Drizzle with olive oil, half of the minced garlic, salt, and pepper. Toss to coat evenly.
  3. Roast the potatoes for 15 minutes until they start to soften.
  4. While potatoes roast, toss the steak cubes in a bowl with the remaining minced garlic, rosemary, thyme, salt, and pepper.
  5. Remove the pan from the oven. Push the potatoes to one side of the pan. Add the seasoned steak bites to the empty side of the pan in a single layer.
  6. Melt the butter in a small saucepan over low heat. Once melted, pour the butter evenly over the steak bites and potatoes.
  7. Return the pan to the oven and roast for another 10 to 14 minutes, depending on your desired steak doneness (10 minutes for medium-rare).
  8. Remove from the oven. Let the steak rest on the pan for 5 minutes before serving. Garnish with fresh parsley.

Notes

  • For extra flavor, add 1 cup of broccoli florets or sliced mushrooms during the last 8 minutes of cooking.
  • Use a cast iron skillet if you prefer to sear the steak on the stovetop before transferring the entire pan to the oven for the potatoes.
  • If you like a stronger garlic flavor, add 1 teaspoon of garlic powder to the steak seasoning mix.
